Ingredients:
1 butternut squash-peeled, seeded, and cut into 1 inch cubes 2 tablespoons olive oil 2 cloves of garlic, minced salt and ground pepper to taste Directions: Step 1: Preheat oven to 400 degrees. Step 2: Toss butternut squash with olive oil and garlic in a large bowl. Season with salt and black pepper. Arrange coated squash on baking sheet. Step 3: Roast in the preheated oven until squash is tender and lightly browned, 25 - 30 minutes. NOTE: If you don't want to cube butternut squash, you can simply cut in half, take seeds out, and then season with olive oil, garlic, and salt/pepper. It may take a little longer to cook. Take out when tender and browned. |
